HAS student wins audience award with crayfish bitterballs

For example, Lena Wabeke (20) from Amsterdam came up with the concept “The Good Catch” or “A tasty plague. ”Bitterballs made of, in this case, crayfish,” the student explains. ”They are delicious to eat in a ragout as a ball. It started in my backyard in Amsterdam. Thought, what are these critters doing in my ditch? Turns out these crustaceans are wreckers of biodiversity. They cut away water plants with their claws and make it very difficult for other animals and plants. They tasted really good. Then I thought: we just have to eat this invasive pest and that’s when I created this bitterball. A thoroughly Dutch product supplied by Crawfish Farm Holland. We want to use ‘The Good Catch’ to tackle more ‘pests’ in the future.

The crayfish bitterballs are in great demand among visitors. In no time, the plate is empty. “A little spicy taste, but they are really delicious,” says one of the people who has tasted a ball. Apparently more people see something in the bitterballs because Wabeke wins the audience award.
