Craw Fish Farm Holland is all about quality, freshness and sustainability. An important part of our working method is the careful sorting and selection of crayfish. After all, not every lobster is the same – size and condition largely determine its culinary value.
🔍 Classification by size
Crayfish are sorted by weight and condition after capture. At CFFH, we use the following classification:

- Large (L): ± 20-30 pieces per kilogram

- Medium (M): ± 30-40 pieces per kilogram

- Small (S): ± 40-60 pieces per kilogram
For upscale preparations or dishes where presentation is important, Large lobsters are favored. Smaller sizes are more often used in salads, soups or paellas. At CFFH, we mainly supply Large and Medium for consumption, which are the relatively large crayfish.
🌿 Quality: living and local
Our crayfish are delivered live or processed fresh daily, which makes a world of difference in taste and texture. At CFFH, crayfish are caught wild and then manually and carefully processed. Frozen crayfish from Spain and China are often farmed using antibiotics, smaller in size, machine sorted and frozen for months with added substances with E numbers. Because of this:

- Do they lose much of their texture and flavor

- Are they often supplied as peeled tails, without claws or shells

- Is the origin and method of capture often less transparent

- Lacks the ecological benefit of removing an invasive species
By buying fresh crayfish from CFFH, you are not only choosing higher quality crayfish, but also a more sustainable solution: you are actively helping to reduce the population of invasive crayfish in the Netherlands.
