Cajun-style crayfish: a festive dish to enjoy together!

Looking for a delicious and cozy dish with crawfish? Chef Johan Verbon shares a flavorful Cajun-style crawfish preparation inspired by the traditional Louisiana crawfish boil. This dish is perfect to enjoy outdoors, with friends or family. With spicy crawfish, juicy corn and savory smoked sausage, you’ll put a feast on the table in no time!


Ingredients (for 4 people)

✅ 1,500 grams of live crayfish
✅ 1 smoked sausage (+/- 300 grams)
✅ 350 grams of red potatoes (firm-boiling)
✅ 3 corn cobs
✅ 1 whole bulb of garlic
✅ 1 lemon
✅ Cajun seasoning, salt and black pepper


Preparation

1️⃣ Preparation: Wash and coarsely slice the potatoes. Slice the corn and cut the garlic bulb in half. Cut the lemon into wedges and the smoked sausage into thick slices.
2️⃣  Cooking: Bring a large pan of water to a boil and add the corn, potatoes, garlic, lemon and herbs. Simmer gently for 10 minutes.
3️⃣  Add the crayfish: Once the water is boiling again, add the smoked sausage and cook for another 3-4 minutes.
4️⃣ Serving: Drain everything and serve on a large platter or traditionally on newspapers in the center of the table.
