During the Gastvrij Rotterdam 2021 event, Good Fish had American TV celebrity Chef Danielle hired Leonie to give cooking demonstrations. Danielle cooked there with CrawFish Farm Holland’s floundering fresh crayfish. She raved about the quality, freshness and size of our crayfish!
For this dish, Danielle took inspiration from Caribbean cuisine.

INGREDIENTS
Crayfish tails, Earl Grey tea, cinnamon, juniper, coriander seed, strawberries, raspberries, cane sugar, olive oil, honey, ripe brie, grated lemon peel, pear pieces and dark chocolate.
PREPARATION
Danielle did not cook the whole lobsters, just the crayfish tails, in Earl Grey tea, to which she added some cinnamon, juniper and coriander seeds. Boiling time about 3 minutes. In addition, she made a jam of strawberry, raspberry and cane sugar. She cut a ciabatta, lightly smeared with olive oil and some honey, into one-hit strips. On that some ripe brie, the jam, on top of that the cooked lobster and over that some pieces of pear, she grated some lemon zest and dark chocolate. A particularly delicious snack!
