Curry soup with crayfish: exotic flavors in an instant!

Ingredients (for 4 people)

✅ 300 g crayfish
✅ 50 g unsalted cashews
✅ 20 g grated coconut
✅ 3 tablespoons of curry powder
✅ 400 ml coconut milk
✅ 2 cubes of fish stock
✅ 200 g noodles
✅ 300 g stir-fried vegetables
✅ Extra virgin olive oil
✅ Fresh cilantro, chopped


Preparation

1️⃣ Stir-fry the vegetables: Heat a dash of olive oil in a pan and briefly fry the stir-fried vegetables with the curry powder.
2️⃣ Add the basics: Pour in the coconut milk and 1 liter of water and add the bouillon cubes.
3️⃣ Cook the noodles: Add the noodles and bring the soup to a gentle boil.
4️⃣ Add the crayfish: Let them heat along for 2 minutes for perfect flavor and texture.
5️⃣ Serving: Divide the soup among four bowls and garnish with cashews, grated coconut and fresh cilantro.
